For the Noodles:
225 gm of your choice of noodles (such as udon, soba, or spaghetti) |
Salt for cooking noodles |
1 tablespoon sesame oil (for tossing cooked noodles) |
For the Sauce:
3 Tbsp Tahini Paste |
2 Tbsp White Miso Paste |
2 Tbsp Soy Sauce |
2 Tbsp Rice Vinegar |
1 Tbsp Honey or Maple Syrup (For Vegan Option) |
2 Cloves Garlic, Minced |
1 Tsp Grated Ginger |
1-2 Tbsp Warm Water, to thin the sauce as and when required |
For Topping:
2-3 green onions, chopped |
1 tablespoon sesame seeds |
Red pepper flakes (optional, for extra heat) |
Lime or lemon wedges (for garnish) |
Instructions for Making Garlicky Miso Tahini Noodles:
- Bring a large pot of water to a boil. Add a pinch of salt and cook the noodles according to the package instructions until al dente. Drain and rinse them under cold water to stop the cooking process. Toss them with a bit of sesame oil to prevent sticking.
- In a medium-sized mixing bowl, whisk together the tahini paste, white miso paste, soy sauce, rice vinegar, honey (or maple syrup), minced garlic, and grated ginger. If the sauce is too thick, add warm water, one tablespoon at a time, until you reach your desired consistency. Taste and adjust the seasoning as needed.
- Pour the sauce over the cooked and cooled noodles. Toss well to coat the noodles evenly with the sauce.
- Divide the dressed noodles among serving plates.
- Sprinkle chopped green onions, sesame seeds, and red pepper flakes (if using) over the noodles.
- Serve with lime or lemon wedges on the side for an extra burst of flavor.
