Ingredients for Cheesy Broccoli and Spinach Soup:

2 cups broccoli florets
2 cups fresh spinach leaves
1 tablespoon olive oil
3 cloves of garlic, minced
1 small onion, finely chopped
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1 cup milk
2 tablespoons all-purpose flour
2 tablespoons butter
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
Salt and pepper to taste

Method for Cooking Cheesy Broccoli and Spinach Soup:

  1. Preheat the oven to 375°F (190°C). Grease a baking dish with cooking spray or butter.
  2. Bring a pot of water to a boil. Add the broccoli florets and blanch them for 2 minutes. Drain and set aside.
  3. In a large stainless steel pan, heat olive oil over medium heat. Add minced garlic and chopped onion, and sauté until fragrant and lightly golden.
  4. Add the fresh spinach leaves to the skillet and cook until wilted. Remove from heat and set aside.
  5. In a separate stainless steel saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes, until the mixture forms a smooth paste (roux).
  6. Slowly whisk in the milk, stirring constantly to avoid lumps. Cook until the sauce thickens.
  7. Add the shredded cheddar cheese, mozzarella cheese, and grated Parmesan cheese to the sauce. Stir until the cheeses are melted and well combined. Season with dried oregano, dried basil, salt, and pepper.
  8. In the prepared baking dish, layer half of the blanched broccoli and sautéed spinach. Pour half of the cheese sauce over the vegetables. Repeat the layers with the remaining broccoli, spinach, and cheese sauce.
  9. Cover the baking dish with foil and bake for 20 minutes. Then remove the foil and bake for an additional 10 minutes or until the top is golden and bubbly.
