Ingredients

Carrots: 1 kg, grated
Full Cream Milk: 1 liter
Sugar: 1/2 cup (adjust to taste)
Ghee: 1/4 cup
Cardamom Powder: 1 teaspoon
Cashews: 2 tablespoons, chopped
Almonds: 2 tablespoons, chopped
Raisins: 2 tablespoons
Saffron Strands: A pinch (optional)

Method

  • Prepare Carrots: Peel and grate the carrots.
  • Cook Carrots in Milk: In a heavy-bottomed stainless steel pan, combine grated carrots and milk. Bring to a boil and then simmer, stirring occasionally, until the milk is fully absorbed (about 45-60 minutes).
  • Add Ghee & Sugar: Stir in ghee and sugar. Cook for another 10-15 minutes, stirring frequently, until the mixture thickens.
  • Include Dry Fruits & Spices: Add cardamom powder, cashews, almonds, and raisins. If using, add saffron strands. Mix well.
  • Final Cooking: Cook on low heat until the halwa turns deep red and the ghee starts to separate from the sides (about 10-15 minutes).

Serving

Serve warm or cold, garnished with more nuts if desired. Gajar Ka Halwa is a perfect dessert for special occasions or simply as a warm treat on a chilly day.
