Ingredients for Rogan Josh Recipe:

Lamb: 500g, cubed
Yogurt: 1 cup, whisked
Onions: 2 medium, finely chopped
Tomato Puree: 1/2 cup
Garlic Paste: 1 tablespoon
Ginger Paste: 1 tablespoon
Bay Leaves: 2
Cinnamon Stick: 1 (about 2 inches)
Cloves: 4
Green Cardamoms: 4
Black Cardamom: 1
Kashmiri Red Chili Powder: 2 teaspoons
Coriander Powder: 1 teaspoon
Cumin Powder: 1/2 teaspoon
Garam Masala: 1 teaspoon
Salt: to taste
Oil: 2-3 tablespoons
Fresh Coriander: for garnishing
Water: as required

Method

  • Marinate Lamb: Mix lamb with yogurt, salt, and half of the ginger and garlic paste. Marinate for at least 2 hours.
  • Sauté Spices: In a stainless steel pot, heat oil, add bay leaves, cinnamon, cloves, green and black cardamoms.
  • Add Onions: Cook until onions are golden.
  • Include Garlic and Ginger: Add remaining garlic and ginger paste, and fry for a minute.
  • Add Lamb: Include marinated lamb and cook on high heat for 5 minutes.
  • Stir in Spices: Add red chili powder, coriander powder, cumin powder, and tomato puree. Cook for 5 minutes.
  • Simmer: Add water, cover, and simmer until lamb is tender (approx. 1 hour).
  • Final Touches: Add garam masala and simmer for another 10 minutes. Garnish with fresh coriander.

Serving

Serve hot with rice or naan. Enjoy the rich, aromatic flavors of this traditional Indian dish!
