Ingredients for Rogan Josh Recipe:
| Lamb: 500g, cubed |
| Yogurt: 1 cup, whisked |
| Onions: 2 medium, finely chopped |
| Tomato Puree: 1/2 cup |
| Garlic Paste: 1 tablespoon |
| Ginger Paste: 1 tablespoon |
| Bay Leaves: 2 |
| Cinnamon Stick: 1 (about 2 inches) |
| Cloves: 4 |
| Green Cardamoms: 4 |
| Black Cardamom: 1 |
| Kashmiri Red Chili Powder: 2 teaspoons |
| Coriander Powder: 1 teaspoon |
| Cumin Powder: 1/2 teaspoon |
| Garam Masala: 1 teaspoon |
| Salt: to taste |
| Oil: 2-3 tablespoons |
| Fresh Coriander: for garnishing |
| Water: as required |
Method
- Marinate Lamb: Mix lamb with yogurt, salt, and half of the ginger and garlic paste. Marinate for at least 2 hours.
- Sauté Spices: In a stainless steel pot, heat oil, add bay leaves, cinnamon, cloves, green and black cardamoms.
- Add Onions: Cook until onions are golden.
- Include Garlic and Ginger: Add remaining garlic and ginger paste, and fry for a minute.
- Add Lamb: Include marinated lamb and cook on high heat for 5 minutes.
- Stir in Spices: Add red chili powder, coriander powder, cumin powder, and tomato puree. Cook for 5 minutes.
- Simmer: Add water, cover, and simmer until lamb is tender (approx. 1 hour).
- Final Touches: Add garam masala and simmer for another 10 minutes. Garnish with fresh coriander.
